Whoop! Whoop!

Things are getting better everyday for the social life of the newlyweds! Hallelujah! I mentioned before that when we moved back to my hometown finding "couple friends" for us to hang out with was not as easy as I had hoped. This has been mostly our fault because we have been gone so much on the weekends and we haven't exactly put ourselves out there ... and it is very unlikely that people are just going to show up on our doorstep. Although that would be nice if they did.


But last night we went to a little dinner par-tay and just had the best time. There were 4 couples all around our same age and we all clicked perfectly! The hostess with the mostess, my friend Katy, made a shrimp pasta that was to die for! I promise to get the recipe and post it as soon as possible. It was a great dish to serve several people at a dinner of that nature. I will definitely be giving it a try very soon. I was given the task of bringing dessert. Right up my alley! I decided on a recipe that my mom has always called "Dump Cake" but in our new Junior Service League cookbook they call it "Cherry Nut Crunch". Either way its the same thing and it is heavenly! And please note that I do not love cherries or nuts but I sure love this... go figure. The recipe is super easy and makes an impressive presentation. I'm all about the presentation. Everyone ate it up so I will be making this again for sure! Try it. Here's the recipe ... you will not be disappointed!


Dump Cake or Cherry Nut Crunch

1 large can of crushed pineapple
1 large can of cherry pie filling
1 box of golden butter OR yellow cake mix
1 stick of butter
1 cup of crushed pecans
1/4 cup of sugar

Pre-heat your oven to 350 degrees. In a lightly greased 9x13 pyrex dish combine the cherry pie filling and the pineapple (do not drain). Then sprinkle the dry cake mix on top of the mixture. Pour melted butter on top of the cake mix, sprinkle the pecans evenly on top and then sprinkle the sugar. Bake for appx. 20 minutes and then take a fork and poke holes in the cake so that the juices can seep in. Bake for appx. 20 more minutes.


I dropped my camera last week at a tennis tournament so I wasn't able to take any pictures but I found this image on the internet so you can get the idea of what the finished product will look like.


**We ended up eating it with ice cream last night and it made it EVEN better. I have also seen recipes where they substitute the pineapple with peaches. I am sure it wound be great with any fruit. Maybe I will try a blueberry pie filling next time instead of cherry. You could also easily leave out the nuts.**

I'm so glad yall are finding such a great community. We are really struggling with the same thing right now...small town and not a lot of people our age. I know the Lord has a perfect plan though!
